Ecstatic Vitality is all about simple, delicious whole foods that can fit into any lifestyle and schedule. I have always been a busy person, and spending hours in the kitchen cooking is not usually an option for me. The recipes below are my favourite easy, healthy go-to creations that even please my dear (no-so enthusiastic about healthy foods) husband.  Comment below on your favourites when you give them a try!

*Regarding organic and non-organic foods. I recommend you visit my page on The Dirty Dozen if you are wondering whether you should by organic ingredients. The bottom line is, yes organic is a safer, healthier choice due to the hazards of pesticides.  Eating local is also a good choice, since your local produce does not travel as far and is a lot fresher. If you can’t get local foods or organic try to get your produce from as close as possible (not shipped from China…) and invest in a good fruit and veggie rinse. It will keep your produce fresher longer and help to get off some of the pesticide residue.
